Not many cuisines around the world are healthier than Dalmatian style of cooking, but besides being good for you, there are a number of amazing meals that simply taste like heaven. Some of them are dishes prepared in a particular way, the so-called ‘peka’ style. Peka specialties are absolutely delicious, examples of cooking at its best in which all the ingredients combine together in a unique taste.

In addition, both meat lovers, fans of seafood and vegetarians can find a meal prepared ‘peka’ style to their taste, since it refers to the way it’s prepared and not to the actual ingredients. What exactly is 'peka'?

 

Food specialties prepared ‘peka’ style are called ‘ispod peke’ in Croatian which is more often than not translated simply and as ‘under the lid’.  The translation is somewhat misleading since ‘peka’ refers to the whole package and not only the top. Concretely, it consists of a large metal dish with a bell shaped iron lid. Once the ingredients are in the dish with lid on, it is then placed in an open fireplace and the lid is covered with embers. It usually takes a couple of hours for the meal to be finished.

 

Meat or seafood?

 

Whether you prefer meat or seafood, know that it can hardly have a fuller and altogether better taste than when done ‘peka’ style. One of the most famous recipes include lamb meat or octopus, particularly in Dalmatia, accompanied by potatoes. Spices generally depend on the preferences, but they tend to include traditional Mediterranean herbs apart from the usual salt, pepper and a drop of (olive) oil. Sometimes the main ingredients are marinated beforehand, but it’s not a must, because ‘peka’ has a way of making all the flavours come together. The end result is a soft, juicy lamb meat (or octopus) in your mouth, which you can’t get enough of.

Lamb meat and octopus may be most frequently prepared dishes, but a lot more can be done ‘peka’ style. In Dalmatia, particular favourites include various types of fish and squids, and vegetarians will be delighted to try vegetables-only dish prepared this way which will certainly give them an unforgettable culinary experience. If you’re lucky enough to stumble across a real ‘peka’ master, you might even get to try a bread done so. Paired with Dalmatian pršut (dry-cured ham), Pag island cheese, locally grown olives and great Dalmatian wine, it’s among the best things Dalmatian cuisine offers.

 

Fine and slow

 

Dishes done ‘peka’ style need a lot of love and patience. The whole process takes a couple of hours, so it’s traditionally done on special occasions when friends gather to spend some time together and at the same time enjoy a great meal. It’s fine dining, and a definite must-try for every visitor to Croatia. So, treat yourself to at least lamb meat or octopus ‘peka’ specialty and experience harmony and culinary heaven.
